In my early 20's I worked on a 300 acre, commercial flower farm. At my young age I had no idea about organic gardening, permaculture or biodiversity. Although I grew up in a family of gardeners, I hadn't grasped the vital importance of growing in organic soil with a broad variety of vegetables, fruits, flora and fauna. I just knew I loved watching plants grow and eating fresh from the garden!
Fast forward to my early 40's I was faced with the option of either, applying for social security disability or educate myself in wholistic living. Fortunately, I chose the latter and am I ever grateful I did! That decision has unlocked a world of healing and knowledge of how the American commercial agriculture is systematically designed to deplete vital nutrients from our soil and produce.
I have always known organic food is better but I still had so many questions about how organic soil produces far better food than commercially grown "mono crops". One day I was working in a health food market and vegetarien cafe where I met the owner of an organic land care company. We immediately became friends and he offered me the opportunity to manage his soil testing laboratory and vermacompost production.
During my tenure at this company I discovered how important it is to have a proper balance between magnesium and calcium in our soil to create balanced pH levels, very much like our body needs a proper balance of these two important nutrients as well.
I also learned a lot about beneficial nematodes and the cation exchange capacity, vital in producing a broad spectrum of enzymes, that naturally occur from growing in "living soil" vs synthetically ammended soils. This led me to the discovery of where digestive enzymes, primarily come from, plants! With the exception of Lumbrokinase which is derived from the earth worm and serrapeptase, derived from the silk worm. But still, these enzymes are produced from the worms eating plant based nutrients derived from healthy soil. Pretty cool!!
Due to our commercially grown produce, we simply are not getting these enzymes that are imperative to so many processes in maintaining a healthy gut, heart, immune and neurological systems.
